Here’s how I make it. For a more precise recipe, I can’t recommend my wonderful pal Sandor Katz’s book Wild Fermentation enough. His website is pretty wonderful too.

Everyone knows kimchi is stinky, but I like to make mine extra fragrant by making it every spring with those stinky, stinky lily cousins, ramps.
